Here are 3 levels of guacamole.

Level 1: Traditional Guacamole
To a bowl, add your peeled and pitted avocados, some fresh lime juice, diced jalapeño and serrano, diced red onion, chopped cilantro, and some salt and pepper. 

Mash everything together before gently folding in a few diced Roma tomatoes.

It's hard to beat a classic, but we can do better. 

Level 2: Roasted Sweet Corn Guacamole
To a bowl add your avocados, diced jalapeños and serranos, red onion, green onion, and a little salt & pepper.

Carefully cut your charred sweet corn from the husk and add the kernels to your bowl along with some cumin and fresh lime juice. Mash everything together well and then gently fold in some diced Roma tomatoes. 

Now this is a great guacamole, but we can still do better. 

Level 3: The Ultimate Lobster Guacamole
I'm using a traditional mocajete for this, but a bowl and a fork will also do the job. 

Mash your jalapeños and serranos together to make a paste before adding in your avocados, lime juice, and salt & pepper before mixing together. 

Add diced red onion, cilantro, Roma tomatoes, and a little more jalapeño and serrano before folding everything together. Now, for the star of the show— poached lobster. 

Carefully fold in your lobster, leaving a few pieces on top for garnish and you're ready to eat. 

Even with all these peppers, it still wasn't hot enough for the ladies. To each their own, I suppose.

My son and I drove from A2 to your amazing food truck today.
I had the fish and chips!
The traffic was awful so we were thinking 🤔 why not open another food truck?? It could be named Detroit 275 (near airport and I275 &94).

More is not always better, in the case of guacamole, simple is best. #1 for the win (I’m Mexican)

The first is BY FAR the best. Too many ingredients ruin a great Guac. Simple is best..
