Aarón Sánchez makes an amazing guacamole with chapulines.

Aarón Sánchez is an award-winning chef, TV personality, cookbook author and philanthropist. He is the chef/owner of Mexican restaurant Johnny Sánchez, with locations in New Orleans and Baltimore, and a judge on Fox’s hit culinary competition series MASTERCHEF.
He co-starred on Food Network’s “Chopped” and “Chopped Junior,” and is the author of two cookbooks. An active philanthropist, Sánchez launched the Aarón Sánchez Scholarship Fund, an initiative empowering aspiring chefs from the Latin community to follow their dreams and attend culinary school.

Thank you Mr. Sanchez, my wife does not like peppers, onions or anything spicy. I never tried guacamole but I tried a slice of avocado and did not like it. I now know why, salt.. I bought a molcajete, cured and seasoned it and made your recipe without the dried grasshoppers. WOW!! I now know what I've been missing... AMAZING!! THANK YOU!!

Tried this recipe today. It is very complex, multi level tasting. You get the creamy avocado, herb, and the diced texture of tomato and onion. Heat comes into the palette. It feels like it’s going to be too hot then quickly changes into lime.

The “core” component is the base. Chilies, lime, onion, and oregano blended together. It ensures the acid and heat are evenly distributed through the guacamole.
