Creamed Cauliflower Casserole
1 Head of Cauliflower - cut in florets
1/4 C Parmesan Cheese - grated
White Sauce -
1/4 C Butter
1/4 C Flour
2 1/2 C Milk
Salt & Pepper to taste
Dash of Nutmeg
Cut cauliflower into florets. Bring a pot of water to boil. Drop cauliflower into pot and
boil for approx 5 minutes or until al dente. Drain cauliflower while you make the white
sauce.
In a medium sauce pot melt butter, add flour and whisk for 2 3 minutes to cook the flour. Season
with salt & pepper & add a dash of nutmeg. Gradually add milk whisking so it doesn't burn.
Cover bottom of casserole dish with some sauce, place cauliflower in and pour remaining sauce on top. Sprinkle grated parmesan over top.
Bake @ 350 F for 15 minutes then raise oven temp to 400 F and bake an additional 10 -15 minutes or until top is lightly browned.
Let rest for 5 - 10 minutes before serving.
