CHEESY SAUSAGE JALAPENO POPPERS

I came up with these years ago, and they please a crowd, picnic, & party every time! Meaty, cheesy with some heat and delicious peppers, it's a bite of happiness! Plus, they are pretty and colorful! Easy to make!

CHEESY SAUSAGE POPPERS

8 jalapeno peppers, washed, topped, seeded, sliced lengthwise
1/2 12oz bag of sweeties mini peppers, washed, topped and sliced length wise.

stuffing:

1 package of softened cream cheese
1/2 c sharp cheddar cheese
1/2 c swiss cheese
1 lb sweet cooked and crumbled pork sausage with a dash of hot sauce cooked in
dash salt
1/4 tsp chili powder
1/4 tsp garlic powder
1/2 c panko bread crumbs or crushed pork rinds for keto option

Mix stuffing up and stuff mixture in sliced peppers. Roll in panko bread crumbs and place on a greased baking sheet.
Bake 20-25 minutes at 350 degrees

Looks fantastic. You got a lot out of 1lb of sausage. I love the fact that you didn't overcook the peppers, you can pick them up and eat them by hand. They'd be awesome for 4th of July celebrations. Thumbs up.

I do something very similar, but use 2 parts cream cheese, 1 part parmesan with the sausage. I love the idea of using sweet peppers and panko. I've found that cutting the peppers in half and keeping the stem on keeps the filling in place. Can't wait to try your version.
