INGREDIENTS
5 medium/large russet potatoes
kosher salt (to sprinkle on potatoes)
pepper (to your liking)
vegetable oil (to rub on potatoes)
1 & 1/2 C. Sour Cream
1/2 C. mayonnaise
garlic powder (optional)
7 slices of thick cut bacon (cut into pieces)
2 green onions (white & green parts chopped)
2 & 1/2 C.Freshly grated Sharp Cheddar Cheese (use as needed)

I made the Fully Loaded Baked Potato Casserole today. It was easy and delicious. I am an Abuelita, living with my eldest son, his loving wife and 2 grandsons. They also loved it. I am a 2nd generation Mexican American that has no idea how to put a tasty Mexican meal together, let alone a edible Mexican dish, but you make it so easy for me. My dearest Rachel, I made this dish for my friend to take to work for lunch. She has been going home dog tired from the hospital and not able to cook for herself. I invited her over for breakfast and lunch and made it while we catch up on our families. When the meat was done the smell permeated the house. Even my three year old granddaughter ate twice and she's picky. Needless to say it didn't make it to her house. It was gone before we knew what happened. But I made another one. This was delicious.
