Greek traditional psarosoupa ( fish soup) kakavia/ παραδοσιακη ψαρόσουπα κακαβιά

Greek traditional psarosoupa kakavia, this amazing dish was called the fish soup the fishermen were eating made out of the fishes they couldn’t sell, it took its name from the pot they used to cook which was called kakapo! You can use different kind of little fishes and big ones and also some shrimps and lobsters or crabs! At the link in my bio you will find my favorite Amazon products I use into my everyday cooking!

• ingredients:
- 2lb fishes of your choice
- 1 big onion in quarters
- 1 big tomato in quarters
- 1 pepper in quarters
- 3-4 garlic cloves
- 2 carrots cut in chunks
- 1 celery stem
- 5-6 potatoes in quarters
- 2lt water ( or vegetable stock/broth)
- 1/2 a cup rice (optional)
- 1/3 of a cup olive oil
- 1 small bunch of fresh thyme
- salt & pepper
-2 bay leaves
- vegetable bouillon ( optional)
• instructions:
- into a pot or instant pot add olive oil and the 2lt of water/broth
- clean and cut all the veggies and transfer into the pot, add the seasoning, if you are using fish fillets add the fish at the end if you are using whole fishes add them now inside a big tea bag or cheese cloth and tie it up to make sure all the bones will stay inside the bag!
- cover and cook until all the vegetables are fully cooked and tender it might take up to 1 hour in a regular pot and 30 mins into a pressure cooker!
- you can keep the veggies as they are or you can puree them as I did, then add the rice and the fillets or the seafood you have, cover and cook until are fully cooked!
- serve and garnish with some fresh extra virgin olive oil and enjoy with grilled bread
