I did this for the first time yesterday and felty like I was about to pop my knees. I am going to take a few days off gym to be careful and rest up my joints. Thanks for the advice

Wrong. The knee should align directly with the axis of rotation on the machine. Sometimes that’s places you closer to the pad, other machines might be different.

I just wanna know, i can do one leg full stack extensions, is that something that everybody can do, or is it about me being a cyclist.

There’s an axis point on the Machine, that aligns with the knee joint. Yes, if your knees extend beyond that you’ll put too much stress in the joint and not stress the quads properly.

Ask any orthopedic surgeon, leg extensions are infamous for destroying ACL and knee caps

Rubbish! Where's you evidence for this? I've probably been doing leg extensions for twice the time you've been alive and always set the back rest to align the centre of the knee joint with the axis of the cam. This is the most common advice and inevitability means the knees overhang the edge of the seat. Absolutely no problems with doing them to full stack for at least 15 reps on any machine I've used. (76yrs).
