thanks for the upload... this looks like an easier way to make caramels than the recipe i found.I really wanted to know how to do choco-covered ones.

By cutting the butter into 8 equally sized pieces you help the butter melt in the microwave much quicker. You don't want the butter or cream to cook in the microwave. You just want the butter to melt into the cream.

These are totally divine, however through trial and error I found that melting sugar and corn syrup over a medium heat is best until it reaches required temperature  and remove pan from heat altogether to add the butter and cream slowly while whisking works a treat. Before that it was just a mad boiling mess and it burned slightly. Also 200g of melted chocolate is plenty to cover one batch of these caramels.

Using corn syrup ensures that no sugar crystals will form, so you don’t have to worry about getting crystals on the side of your pan!

For this recipe we really recommend using a candy thermometer. The temperatures have to be exact for the caramels to set properly. You should be able to find a good quality candy thermometer at your local home goods store. You won't regret getting one :)

Thank you for the recipe. I would like to suggest a laser digital thermometer in spite of the fact it is instantaneous you do not need to clean it.

ok so i followed the directions to the tee had a thermometer and everything. chilled them for 4 hours like told when i tried to cut them they were a sticky gooey mess. so i rolled them into balls then dipped them in the chocolate at which the chocolate melted them into some kind of blob. of course this is the kinda thin very hard to mess up i threw my creation into the freezer over night and cut it up and it was gone in less then a day. still wondering what i did wrong, thanks for the recipe and your time.

Use a glass bowl on top a kettle with water for the chocolate 🍫 forget that microwave .

Although i haven't made this recipes, last night I did a different "chocolates" recipes of which started with melting sugar and then adding cream...of which it tastes exactly like butterscotch, not caramel. Does the addition of butter and corn syrup really change the flavor from butterscotch to caramel?

You say let the caramel sit for 15-20 minutes, then you say cut after 3-4 hours. What is to be done after the first sit time
