Yes, the rice is mushy this way, but I changed mine by cooking the chicken halfway and then adding the rice and chicken broth. It was tasty, and the rice was perfect. 👌 You could still see the individual rice strands. Maybe you can try it this way.

I think I’d cook the chicken on pretty high heat quickly for a few min on the stovetop, then add the rice. Can still be one pot if you use a stove & oven safe dish! Rice to stock ratio also looks a little off — either more (rinsed) rice or less stock

Get a good sear on chicken or brown the the edges then add the chicken broth and then rice
