Anakin was emotionally unstable and couldn't control his impulsiveness, which became his downfall. Luke was impulsive, but he learned to stop himself and analyze the situation first.

I think it’s interesting that obi-wan feels his life would be easier if the Skywalkers didn’t “care” so much yet it is his own determined feelings of loyalty towards Qui-Gon for failing to save him that makes him swear to train Anakin despite the Jedi’s and his own misgivings and it is this same sense of loyalty that causes him to watch over and guide Luke after failing to save Anakin when it would’ve been easier to give up. In a way Obi-Wan also cares very strongly about the Skywalkers and about the fate of the galaxy as a whole.

Anakin was consumed by fear over losing his loved ones. Luke on the other hand wasn’t consumed by fear. He was just determined to protect his friends. That’s why Luke didn’t fall to the dark side when Anakin did.
