At 160m (then, it's now 190m), the tallest building after the pyramids was Lincoln Cathedral which was completed in 1311. The next tallest structure was the Washington Monument, at 169m, which was completed in 1884. The Great Pyramid of Giza is 139m tall (c. 2570 BCE). To be fair though, it's still pretty impressive that the pyramids were the tallest buildings in the world for over 3, 500 years.

Lincoln cathedral spire 1311 (you could argue it wasn't stable because it fell over 237 years later but that's still a decent amount of time)

It’s actually Lincoln Cathedral, UK. From 1311 to 1548. Best know to records.

Neil is quite wrong about this. There were several European church towers higher than Khufu's pyramid, built centuries before the Eiffel tower. Saint Paul's Cathedral in London was built between 1240-1311 and it was 149m, 2.4 meters taller than Khufu's pyramid. Also, Lincoln Cathedral-Lincoln, St. Mary's church-Stralsund, St. Nicholas church (only 0.4m taller)-Hamburg, Rouen & Cologne cathedrals etc.
