I saw Stephen Cusato (Not Another Cooking Channel) make his Cacio e Pepe this way, making a cream or a slurry out of the cheese, and it looked so good, but I noticed NO ONE ELSE was doing it this way. They all insisted on tossing the grated cheese on top. I've tried both, and this way is foolproof. Pasta Queen hit the ruby gel nail on the head when she said you assemble off the fire, with just the heat of the pasta and the pasta water to bring it all together. Delicioso!
