I remember when villager breeders were incredibly complex. It's nice to see them so simple nowadays.

If you don't have minecarts and move them by boats, it helps moving them into the trading station when they're still little. Move them via boat then just place a bed where you want them to go and they'll jump on it. Remove the bed then quickly place two temporary blocks to prevent them from escaping. A benefit is that the kids cannot steal another villager their job and since they're less than a block in width placing the temporary blocks is easier.

I've been using this design (or a variation thereof) since villager breeders broke in 1.16. Very reliable, very easy! I usually have the collection area for the babies right below the farm for the smallest footprint possible, so my breeders are usually like 6x7 total. Pro-tip: if you make the area to the beds only two blocks tall, you can place iron trap doors in the top of the archway leading from the farm to the bed area, so you don't accidentally right-click a wooden trapdoor and end up with your breeding villagers in the collection area. No, I don't know this from personal experience, why are you asking?

Works in 1.21; I just made it in my Hardcore World and it works well. In the beginning they might not instantly start breeding because the crops haven’t grown. After a hour it started working. Note: it does not work in Bedrock Edition so don’t even bother trying.

TIP:
if your still in a beginner world and don't wanna go to the nether, one thing you can do is place a block on top of the composters, and put torches around the blocks. no need to go to the nether.

This is a super efficient farm. I’ve used it a few times now and always end up with more villagers than I could ever use. I incorporate an iron door next to the beds so I can turn it off by removing 2 of them until I need more. Have fun and happy building!

Where the little villagers fall, if there are hopper minecart and hopper underneath, you can even collect carrots because they drop them, and below them too :D

For those who are building it underground, make sure to put torches in all the corners so you can be able to put carrots into farmland. You can also skip on glass if you want. Shroomlights, sea lanterns and every light block works as an alternative to glowstone.
