20 meals in 20 minutes: gochujang peanut noodles

6 ounces dried noodles of choice
2 green onion, thinly sliced, plus more for garnish
6 cloves minced garlic
3 TBS neutral oil
¼ cup peanut butter
¼ cup gochujang
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
Salt and pepper, to taste
Toasted sesame seeds for garnish, optional
Cook the noodles according to the package instructions until they are al dente. Drain and set aside. Meanwhile, place the green onion and garlic in a large bowl. Heat the oil in a microwave-safe dish until it’s hot, about 1 minute or so. Pour the hot oil over the green onion and garlic, and stir to combine. Next, whisk in the peanut butter, gochujang, soy sauce and rice vinegar. Continue to whisk until well combined. Add the cooked noodles to the bowl and toss them in the sauce until they are evenly coated. Taste and adjust seasonings, adding salt and pepper, if necessary. Serve immediately and garnish with sliced green onions and toasted sesame seeds, if desired. ENJOY!

You can literally add veg and protein to make it balanced. My god.

When I make this peanut butter noodle, I always add tofu.

I have a similar busy meal. And while it's not super balance, you can also stock it up by adding protein and veg if you wanna.
