I've been making this baked banana and blueberry oatmeal for breakfast/brunch for years and years and it's still a real favourite in our house. It's an easy brunch option, so delicious and brilliantly warming on a cold day. Recipe below...

Ingredients
- 50g oats, 1/2 cup
- 35g fresh blueberries, 1/2 cup
- 50g walnuts, 1/2 cup
- 2 ripe bananas
- 30g sunflower seeds, 1/4 cup
- 70g raisins, 1/2 cup
- 5 tablespoons almond milk
- 2 teaspoons of cinnamon
- 2 tablespoons maple syrup

Method
Preheat oven to 180c, fan setting.

Place the oats in a bowl and cover with boiling water, just so the top is covered - soak for 10 minutes, until soft.

While the oats are soaking, mash one of the bananas and slice the other into pieces, crush the walnuts into bite-sized chunks.

Once the oats have absorbed the water and become soft, stir through the mashed banana, chopped walnuts, maple syrup, cinnamon, blueberries, sunflower seeds, almond milk and raisins. Transfer the mixture to a baking dish and place the pieces of sliced banana on top.

Cook for 20 minutes, until golden. This oatmeal is best enjoyed warm, straight from the oven.

I used her recipe as a starting point and modified to a larger batch based on what I already had on hand, and since this is the first time I've made this, I'm quite impressed! This really is so delicious straight from the oven!! Even my toddler loved it!!

Ingredients:
• 2 cups old fashioned oats
• 1 cup berries (I had about 1/4 c blueberry and 3/4 chopped strawberries from the fridge so that's what I used)
• 3 speckled bananas, mashed
• 1 scant cup raisins
• 1/2 cup pecans
• 3 tsp cinnamon
• 1/2 raw honey

Instructions:
1. Preheat the oven to 350°F
2. Place the oats in a mixing bowl and cover with hot water, just enough so the top is barely covered, and soak for 10 minutes
3. While the oats are soaking, gather/prepare remaining ingredients
4. Once the oats have soaked, add in the remaining ingredients, stir until evenly combined
5. Pour into a 2.5 qt baking/casserole dish
6. Bake for 30 mins or until moisture appears absorbed at the edges.

This made more of a sticky oatmeal consistency, but if you prefer it more runny, simply pour some milk over your serving in a bowl, stir, and enjoy!

Also, this yielded roughly 6-ish 1-cup servings cooked.

Wow everything about this from it being posted on a Sunday to the music, the visual, the actual recipe is so beautiful! I must try baked oats. My personal choice is porridge cooked in the hob with fresh blueberries thrown in half way so they warm up and burst. When serving in a bowl I add on dark chocolate chunks... heaven! It’s my go to in winter and so quick and doable for weekday mornings.

I tried this this morning and Oh My I don’t think I’ve ever felt more warm and cosy from within before this is the best breakfast for a cold morning and it is SO DELICIOUS best breakfast I’ve ever had!!!

This recipe reminds me of when my boys were little and we'd make baked oats. It wasn't this fancy but it was delicious and we made wonderful memories together! I'd love to make this when they'd come to visit in the winter in the future. Thank you for sharing your creativity and sharing your positive, beautiful soul! I just did this and I don't know if it's because I had higher expectations thanks to the lovely aesthetics of this video, but it didn't came out neither as pretty nor as good. I would like to give it a second try tho, by leaving out the soaking part. That way it would come out more crunchy, kind of a Granola that I can pour milk in at the end... :D // Pro tip: toast those walnuts before putting them into the mix. Makes a difference!

I used to make this family favorite back when I was still carni. I can't wait to try this plants only version. I'll leave out the nuts and seeds plus use diced apple and the zest and juice of an orange in place of raisins and maple syrup. Oh, I can't wait.

Such a delicious oatmeal recipe! Made it instantly after watching the video. New breakfast favourite. Halved the amount of syrup and added honey instead - still had plenty of sweetness. Switched out the dates for dried cranberries too.

Omg I have just made this and it’s completely out of this world delicious!! Thank you so much Ella for yet again another wonderful recipe. I used crushed almonds instead of walnunts as I didn’t have any and hazelnut milk as well as I didn’t have almond milk and I just wanted to make it right now lol 😍
