Follow along as I whip up a batch of Vietnamese Spring Rolls featuring rice noodles, fresh herbs and veggies, plus a spicy lime peanut sauce with 2 variations (full fat or low fat), using several ingredients I found on the Thrive Marketplace. Not only are these rolls vegan, but gluten free, as well.

INGREDIENTS:
Rice paper wrappers
Maifun Brown Rice Noodles
Powdered Peanut Butter or Peanut Butter
Tamari Sauce (Reduced Sodium variety)
Sweet Chili Sauce
Coconut Nectar
Lime

Next time don't dunk your rice paper in hot or warm water. That'll make your rice paper weak and rip apart when u roll. Use room temp or cold water. It's gonna seem like that's not gonna work at first, but the paper softens while you're putting all the filling in. By the time u need to wrap it up. it'll be sufficiently pliable.

My go to lazy peanut sauce is sweet chili sauce, peanut butter (PB2 works), and water to thin. If i'm feeling fancy, I add lime juice and cilantro. Highly recommend you try it out with these fresh spring rolls. Great video guys :)

There's a food cart where I live that makes MASSIVE spring rolls full of veggies and noodles and avo for only $3.50. Like is there anything more guilt free than cheap healthy vegan food?

I double the rice paper and lay them out like a venn diagram, stuff and then roll. They come out a lot prettier and the filling stays in!

You definitely need to try quick pickled veggies on there! Traditionally we do daikon and carrots, i have a recipe on my blog if you want to try them. They're super fresh and crunchy :)

Tip from a Viet. Your water is too hot. It should not steam. Dip them super quick. They should be hard as you place them on the board. Do 2 at a time. And you will not only do it faster but you will perfect your motion!

I like the DayGlo nails! I've tried mixing up the usual rice paper rolls by adding fresh fruit pieces in place of starchy things or tofu. And adding a bit of sriracha sauce to go with the sweet/sour fruit.

You guys are the cutest couple. In addition to the fillings you used I like to add pineapple, mango or avocado and I personally like to season my rice noodles with some rice wine vinegar. ☺️

Hey anji! :) maybe an atypical question but was wondering if you could share your yoga/fitnesse regime? I do(or struggle)with yoga and it looks a bit like strained interptetive dance haha.. your curves are rockin and it would be great to see how you maintiain that.

I have a few things to say so here I go numbering 😂
1) Is it me or a you looking prettier every time I see you, seriously???
2) I have some rice paper waiting for me to do something with it and bam you make this video yay!
3) You not knowing what you're doing in the kitchen is better than me on a good day but thanks to you I won't give up 😂
