🥪 Crispy Italian herb chicken sandwich with pesto mayo & melted mozzarella.

- Whisk 1 egg in a bowl
- Add 1 cup of Italian herb panko breadcrumbs to a wide bowl ( I used Private Selection brand )
- Submerge 2 thin chicken breasts in a egg mix & then dip into breadcrumbs , completely coating them
- Air fry at 360 for 20min ( flip in between )
- Top with mozzarella & cook an additional 1-2min
- Butter & toast sourdough bread
- Mix 1tbsp pesto with 2tbsp mayo
- Load sandwich with pesto mayo , spinach , chicken , tomatoes , everyday seasoning or pink salt & balsamic glaze.
