Batch cooking FREEZER MEALS from Scratch | Easy and Quick Breakfasts

Hey Friend!
Come along with me in the kitchen as we prepare for a day of batch cooking freezer meals for breakfast! These easy + delicious meals make mornings easy if you are short on time and need a quick meal to heat and go without sacrificing good food! These are healthier alternatives to what you can find at the grocery store! We are cooking up Quiche, baked oatmeal with a twist, 3 kinds of waffles, sheet pan pancakes, breakfast sandwiches, egg cups and homemade poptarts! I hope you enjoy this breakfast edition of Batch Cooking Freezer Meals :)

***Cool all recipes completely before freezing!
Quiche(1)
6-8 Eggs
1/2 cup milk
1/4 heavy cream
Salt and pepper
1-1.5 cup extras like meat, veggies, spices and cheese etc.
Grease pie plate, add your extras, mix your quiche base and pour over the extras into the pie plate. Bake at 350 for about 45-50 minutes or until the center is set and top is golden brown.
Once cool, cover with plastic wrap and then with foil. Freeze for up to 2 months.
To warm, let thaw overnight and bake at 350 for about 15 minutes or until center is warm.
Baked Oatmeal(1)
2 cups rolled oats
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 egg
1/4 honey
2 cups milk
2 tsp vanilla
2 cups of add ins, fruits, jams, nuts, raisins etc.
combine dry ingredients and place half in greased 8x8 pan. (can use bigger but will be thinner and bake faster) Next place your add ins on top and add the rest of the dry ingredients on top. Combine and pour your wet ingredients over top.
Bake at 350 for 35 minutes or until set and golden brown.
Cover with plastic wrap and foil and freeze for 2 months
To warm, thaw oatmeal overnight. Place in oven at 350 for 15 minutes or until center is warm.
Waffles
To make one batch
2 cups flour
1 tsp salt
1.5 tbsp baking powder
1 tbsp sugar
1 2/3 cup of milk
2 eggs
1/3 cup melted butter
1 tsp vanilla(omit if making savory waffles)
Keep plain or add in 1 cup of cheddar, 1/4 cup chives and 5 slices cooked and crumbled bacon.
Freeze prepared waffles in freezer bags for 2-3 months.
Banana Waffles
Sheet Pan Pancakes
1 batch
2.5 cups flour
2 tbsp baking powder
2 tbsp sugar
1 tsp salt
2 cups milk
2 eggs
2 tbsp melted butter
pour batter onto parchment lined cookie sheet, greased. Spread evenly and top with your choice of toppings.
Bake at 350 for 10-12 minutes
Freeze in Freezer bags for up to 3 months
Breakfast Sandwiches
Prepare eggs, cheese, meat and any other add ins you'd like. Assemble sandwiches and wrap in freezer paper. Place in freezer bag and freeze up to 3 months. Thaw overnight and reheat in oven at 350(8-10 min) or microwave(30 second intervals)
Egg cups(12)
Mix up 10 eggs, add a 1/4 cup of milk, pinch of salt and pepper. Grease a muffin tin well, add in 2 tater tots and sprinkle cheese on top, pour egg mixture over. Bake at 350 for 15-20 minutes until set and golden brown.
Freeze in freezer bag for 2 months. Thaw over night and warm in a 350 degree oven, or in microwave/toaster oven. You can put these in the oven frozen, it will just take longer to warm through. I keep checking every ten minutes or so.
