I make fish sandwiches all the time and I can assure you that a full slice of cheddar cheese is just right...they're just maximizing their profit margin at your expense. Even if you want to mimic a filet o' fish it's incredibly inexpensive to buy premade cod patties from Grotons or Mrs. Pauls, bake them in the oven, get cheap buns and mix up your own fantastic tartar sauce with mayo, finely minced onion, diced pickle, black pepper and either fresh lemon juice or pickle juice in a pinch. I like to make my own cod from scratch but the premade patties are actually pretty good, even better that a filet o' fish. I like the beer battered cod varieties which are often on sale for $4.99 (10 pieces). Better yet is making fish and chips from scratch and a large batch of lightly dressed cole slaw.

They used to have a full slice and I love cheese, even bringing an extra slice myself after scraping off the tarter sauce. Fries can't be beat either as long as their reasonably fresh. I've gotten fish I swear was left over from day before and so dry the breading was falling off. If it's the color of last falls leaves in Spring it's warmed over too long. I look at the fries pan before ordering to see if they have boxes already filled to grab, red flag for warmed over fries too.

They stopped pre-making sandwiches over 20 years ago. I was still there when they rolled out staging. The bin was still there for a while longer, but they hold the proteins in trays then assemble as they're ordered.

Given that most McDonald's assemble to order nowerdays rather than having ready items asking for no cheese will not get you fresh fried fish

The actual reason why McDonalds have a 1/2 slice of cheese dates back to when the were still owned by Ray Kroc. Apparently, the story goes that he was walking through one of his restaurants when a staff member took a fillet o fish for their lunch break but before doing so, the staff member broke of 1/2 a slice of cheese and added it to their fillet (the fillet o fish originally had no cheese). Ray saw this and tried it himself and liked it so much that he decreed that this was the way the fillet o fish should be served from them on. Also, the bun is steamed not grilled as with all their other sandwiches.

McDonald's used to fry pies and French fries in tallow.

I prefer to remove the cheese if I Don't remember to ask without cheese. Cheese and fish isn't nice for me.

Actually no, McDonald's fries don't taste as good now as they did when I was a kid. Then again, they're supposedly healthier.

At our school they also put cheese on it as well, as other fast food restaurants put cheese on it to. I was done with there fish, when, they done away with the Cod, it just doesn’t taste right with the cheaper cut of fish. They need to bring the Cod back. They also quit using the thicker sausage patties, the year they made a lot of product changes, that’s when, they also changed to a cheaper grade of sausage patties as well, and, there not as good as the thicker patties so, that’s another item, I no longer buy at McDonald’s.

I love this sandwich. I custom order my burgers at McDonalds and have them used the steamed buns from this sandwich on my quarter pounder with cheese. It's the bomb!

Asking to hold the cheese, doesn’t get you a freshly cooked filet. It’s already cooked, they just assemble it and not include the cheese when you order it lol. You’ll just be lucky if they ran out of cooked ones and are force to cook some more. We would always have about 4-6 filets cooked since it wasn’t THE popular food item. At times we’d go down to 2 depending on the time of hour & day.

I literally just watched a video about why McDonald's fries changed for the worse, (they used to fry them in beef tallow); so I'm already critical of this video right off the bat bc it started off with a false statement.
YES, the Filet of fish keeps shrinking, it's a terrible value. Anyone remember Burger Kings Whaler? Now THAT was a fish sandwich! Arbys fish was awesome too, before they changed them a couple years ago.
