I definitely feel like this could be easily salvaged. Maybe with apple cider instead of apple juice? I once made an “apple cider donut box cake” by doing something similar, swapping the water with apple cider and adding cinnamon, and that turned out really good. The pancakes did took a bit flat though. The apple butter cream cheese spread was interesting, I’d be curious as to what you could add to make that better.

This could be good. It could totally be fixed. Apple flavored pancakes with seasonal decorations is a nice concept.

Every time they do one of these recipes, my brain automatically understand all the ingredients that would make it work 😂 just a teaspoon of white sugar to each batch, and then an egg and a bit of leavener in the pancakes, and it's golden!

You could use coconut with a little bit of green food coloring to make edible grass

Probably take the apple butter/cream cheese mixture and smear that on like she did, then take those colored sugar decorations. Get more colors, sweetness and everyone would enjoy more. I love coconut but I also understand a lot of people don't like it.

What if you used some of that like cheesecake filling stuff instead of the regular whipped cream cheese to add sweetness?
I think this recipe didn’t seem awful, until the coconut. I see it used as edible decoration a lot especially around Easter and sometimes it is really cute but I just can’t with the coconut lol

Years ago I had a coworker who made the most incredible fluffy pancakes and I wish I had asked for a recipe. All I can remember is she used applesauce and cinnamon. Something with the applesauce made them so fluffy, but I don't recall if she added some water or how much or anything.
