Hey friends, I'm sharing 3 recipes that are perfect for your family's Easter dinner table, a spring picnic, or just any weeknight dinner! They are all quick, easy, and made with simple, inexpensive ingredients you can find at any grocery store! I hope you have a beautiful and blessed Holy Week. EJ’s Broccoli Mac & Cheese:
12 oz bag of frozen broccoli florets
12 oz bag of frozen broccoli cuts
(You can use just florets but we like the stems to add texture)
1/2 of a 8 oz bottle of green lid shelf stable parmesan cheese
2 bags of 8 oz sharp cheddar shredded cheese or 1 big one
16 oz sour cream of your choosing
24 oz small curd cottage cheese
(16 oz is fine if not adding broccoli)
16 oz box of any pasta
Boil pasta and frozen broccoli together in same pot. Drain when pasta is al dente. Mix everything in pot, but only use 1/2 shredded cheese. Put in greased oven safe pan - I use a 9 x 12. Add the rest of the big bag of cheese or second bag of cheese on top before you bake it. Put in a 350-400 degree oven for 30-40 minutes. Use the higher temperature and longer cooking time if you like it crispy. We do! 😍 This also makes a great meal if you cook a package of Italian sausage links or another savory sausage & chop them up, drain the grease, and add them to the mix. I don't add any salt because the cheeses are pretty salty, but add salt and pepper to taste if you like.
I LOVED THIS RECIPE!!! I added in some cooked chicken breast some onion and garlic powder and made a panko topping to add before baking, too. Thanks a million EJ I appreciate you sharing your recipe and your support here means to world to me!

Loaded Potato Salad:
4 med to large potatoes
1 ½ cups mayo
2 tbsp mustard
½ tsp salt, pepper, garlic powder and paprika
2 green onions
5-6 slices cooked bacon
4 hard boiled eggs

Wash and dice up potatoes, boil until fork tender
Mix the other ingredients leaving out one egg, some bacon and green onions for garnish
Drain your potatoes well then mix them into the other ingredients and top with your garnishes!

Nutter Butter Banana Pudding:
Here’s a link to my original recipe, just add a tsp of vanilla into the pudding mix, replace the vanilla wafers with Nutter Butter cookies, top with some mini chocolate chips and if you’re feeling extra - melt up some peanut butter in the microwave to drizzle over the top!

Hey Mel, sorry to hear y'all have no power, it was so windy here last night that i was worried it would go out b/c my mattress uses an electrical pump and i have my oxygen, i just kept praying, prayers that y'alls is back on soon!

Everything looks fantastic! Your potato salad reminds me of my mothers. She added very thinly sliced red radishes to hers and that little bit of crunch was so good!

1. Ooh I like the way you think. When you put that cheese on top my first thought was "I bet that would be good with some buttered bread crumbs too". 2. My grandmother would roll over in her grave if I left out the sweet pickle relish and the pimento, but this one looks wonderful. 3. I make cooked banana pudding and I still want to try this one. And you should try adding a couple of drops of almond extract to your pudding. It will make people ask what's in it. You just have to be sure not to do more than a couple of drops or it will overpower. I think you should call this one Elvis Banana Pudding. 😉

I had a potato salad at my sisters house several years back. It was absolutely the best potato salad I’ve ever eaten. I told her that and asked where they purchased it. She said it was made fresh with potatoes were dug out of the ground today. My sister has since passed away so I haven’t had any more of that, but it was the very best.

You would make a great news reporter! Love all the chalk art! We do something similar on our Main Street in town. Love seeing so much talent!
