Mead, the enchanting wine born from honey rather than sugar, takes on a delightful twist when fruit is introduced into the mix, resulting in what's known as melomel. Among the various home brews I've experimented with, melomel holds a special place in my heart, particularly when it's crafted with wild black raspberries harvested from the prairie patch right in my backyard.

The year 2022 blessed us with an extraordinary bounty of these berries, allowing not only for the creation of jams and a variety of desserts but also for an ample supply to be transformed into my favorite summer brew. Moreover, the surplus was preserved for a mid-winter batch, ensuring the flavors of summer could be savored year-round.

This video takes you through the journey of turning these luscious wild black raspberries into a rich, homemade melomel, showcasing the process from berry picking to bottling. Jeepers, I can barely hang on to my brews for more than a couple of months. Bet its really good after a year!

PH levels for acid balance, and tannin for mouth feel can go a long way towards making excellent Meades. There are non fermentable sugars to adjust sweetness before bottling. There should be no need to bottle a year before drinking. Aged Meade really can mellow, and improve over time, but I have enjoyed really nice Meade after five or six weeks.

Must u store it in the fridge after bottling so that it can last for more than a year?

I made some and the fruit flavor was gone. I was told to put fruit in the secondary after fermentation.

Mixed with vodka for preservation and it smells like plastic. It's really the strangest thing and I can't find any info about it. Don't know what to do. Stored in glass for 1.5 years. Taste meh but not terrible. Smell tho....strange plastic smell. ??
