What do you think about the void that was discovered in the Great Pyramid? Is the "void" an empty space? Or is it something else?

I actually watched a documentary where they found the papyrus scroll that lists off how the Great Pyramid of Khufu was built, and the documentary also noted the sort of rock refuse like center of the Pyramid, so I think your second hypothesis might be more likely!

Is it possible that void(s) were engineered into the design to save time/money? I.e. stones spanning others rather than being butted up next to each other all the time?
