Sharing all the meals I ate on a snowy day in Vermont! This what I eat in a day is fully plant-based and shows three super quick and easy recipes. We've got a simple breakfast toast, an amazing vegetable soup and some tasty vegan crab cakes for dinner! Hope you enjoy :)

– drip coffee with oat milk creamer (back to matcha once my blender comes!)
– almond butter toast with dried blueberries and pumpkin pie spice
– vegetable white beans soup
– vegan crab cakes with rice, asparagus and kale

It looks like 6-9 oz of non-dairy creamer in coffee. Poor coffee.
