I'm still trying to understand this conceptually tbh, I get the whole cancel out thing, but why are we multiplying the given unit by the ratio in the first place, like what does that represent

"Put it all in the calculator..." and multiply what by what? When the units cancel each other, do the numbers cancel too? Or do the units only cancel, and you multiply all the numbers? Or just the original number by the only uncanceled number?
