How Cinnamon is Harvested

After the worker skillfully cuts the young branches, the outer bark is carefully peeled away, revealing the precious inner bark. This inner bark is what we know as cinnamon, the heart of the spice industry. But did you know there are actually a variety of spices often sold as cinnamon, with two types—Ceylon and cassia—being the most common?

Cassia, also known as Chinese cinnamon, is responsible for the intoxicating flavor and scent associated with foods like cinnamon rolls or cinnamon swirl bread. Ceylon, or “true cinnamon,” is native to Sri Lanka and southern parts of India. It is less common and more expensive than the cassia variety.

Workers meticulously strip the inner bark off in long, fragrant rolls. Each roll is then laid out in the sun to dry. As they bask in the sunlight, the bark naturally curls into the familiar cinnamon sticks we use in our kitchens.

Growing up in the Caribbean and I took for granted that I could just go outside to our cinnamon tree cut out a piece of bark and make some tea with it. Or grab some of the leaves and have some seasoning. Same with cloves, honestly I was shocked when I saw expensive they were.

Ceylon is lower FODMAP of the two so If you experience GI issues like gas try Ceylon instead.

Yep. When I first tasted cinnamon in the US as a child I felt it tasted different and wondered why it was always powdered when I was used to seeing it as sticks in Mexico...then I found out it's a different kind. We use Ceylon.

You are literally killing this tree... any outdoor craftsman knows that if you are going to harvest bark... you are supposed to leave a vein to allow the roots to transport moisture to the top of the tree... i realize this is Chinese propaganda and they really don't care about conservation in any way... however... it actually benefits you to allow the tree to survive so you can have abundance in the future
