Hello Julian,
Thank you so much for explaining the technique for stretching the pizza dough. Today, I made Neapolitan pizza and it was wonderful. I used your technique and had to practice it using a towel. The hardest part was twisting the dough by 90 degree. I am good at doing itnow at very low speed but with practice I think I will be able to do faster and faster.
What I liked about your video is that it explains in details how you go about stretching the dough.

gonna try your method. my stretching technique leaves my dough thinner in some places and thicker in others, which results in lopsided pizzas and areas that are either too thin or too thick.

Hmmm, I was taught to slap it to the inside of my wrist, versus the top of your hand like you do. Frankly, I think your way looks easier. I'll practice this Friday when I next run my wood fired oven. Thanks for the tips.
