Making clarifed butter is super easy and allows one to really pack flavor into their sautes, meats, or whatever. Check out this video to see how I do it!

Pound of butter (whatever how much you want)

Y'all, it's the solids (proteins) that burn, so using clarified butter (milk fat only; solids removed) is how you can cook with butter on higher heat and for longer time without worrying about the butter burning. Basically, it allows you to use butter like a high smoke-point oil--doesn't taste oily--only tastes buttery good!

Here is a tip that works well for me. I place the pot in the fridge until solid again, then remove it from the pot. You can remove any remaining white particles by wiping them off with a paper towel. Under the solid will be a layer of water which you can pour out. Then, melt again and repeat. This extra step ensures the final product is 100% clarified. While a bit more work, it is well worth the effort.

I just finished making clarified butter. I used blue bonnet butter and I used 5 packs (20 sticks) and I almost filled my mason jar with it. I felt like I was in science class. It’s so cool to see how everything separates and there was so much water in it. I’m soooo glad I saw this technique on your channel. You do such a good job with your demonstrations.

The golden child of any flat grill cooking, sigh I remember using it when I worked up at Ober here in Gatlinburg. A tip my Grandma taught me some 60+ years ago that requires a little less attention. Fill a pot about 1/3-1/2 full of water bring to a boil, place a round metal bowl that the bottom will only go into the pot about an inch, place the butter in the pot and go on about your business for a little while. You do not have to be as precise on the temp or pay as much attention to the butter and it will not scorch. Once the butter separates pour it off the exact same way.
