Ingredients:
4 trout filets (salmon can be used as well, skin on or off)
Salt
Pepper
Garlic powder
Smoked paprika
Red pepper chili flakes
Italian seasoning
Smoked paprika
Olive oil
2tbsp unsalted butter
1 shallot sliced
3 cloves of garlic minced
⅓ c white wine or chicken broth
1 cup sun dried tomatoes
1 ½ cups heavy cream
2 ½ cups baby spinach
½ c shredded parmesan cheese

Directions:


Season the fish with salt, pepper and garlic powder. Heat about 3 tbsp of olive oil in a large skillet over medium-high heat. Cook the fish for 5 minutes on one side and 3 minutes on the other side for medium inside, cook 10 min for well. Remove and set aside.
Add 2tbsp of butter to the same skillet. Add in the shallots and garlic and cook for about 1 minute. Add in the sun dried tomatoes with red pepper flakes, cook for about 3 minutes stirring constantly.
Pour in the white wine and let it reduce a little. Reduce heat to low heat and add the heavy cream, bring to a simmer. Season with the italian seasoning and smoked paprika and stir to incorporate.
Add in the spinach leaves and let the sauce simmer while stirring occasionally until the sauce reduces and is thicker.
Remove from the heat and add in the parmesan cheese, mix until incorporated. Add the fish back into the pan and put the sauce on top.
Eat and enjoy! It’s great with mashed potatoes or pasta.

Notes:
Feel free to take away or add seasonings.
