Tuscan Butter Salmon | Delish

INGREDIENTS

2 tbsp. extra-virgin olive oil
4 (6-oz) salmon fillets, patted dry with paper towels
kosher salt
Freshly ground black pepper
3 tbsp. unsalted butter
3 cloves garlic, minced
1 1/2 c. halved cherry tomatoes
2 c. baby spinach
1/2 c. heavy cream
1/4 c. Parmesan
1/4 c. chopped herbs (such as basil and parsley)
Lemon wedges, for serving (optional)

DIRECTIONS
1. In a large skillet over medium-high heat, heat oil. Season salmon all over with salt and pepper. When oil is shimmering but not smoking, add salmon skin-side up and cook until deeply golden, about 6 minutes. Flip over and cook 2 minutes more. Transfer to a plate.

2. Reduce heat to medium and add butter. When butter has melted, stir in garlic and cook until fragrant, about 1 minute. Add cherry tomatoes and season with salt and pepper. Cook until tomatoes are beginning to burst then add spinach and cook until spinach is beginning to wilt.

3. Stir in heavy cream, parmesan and herbs and bring mixture to a simmer. Reduce heat to low and simmer until sauce is slightly reduced, about 3 minutes.

4. Return salmon back to skillet and simmer until salmon is cooked through, about 3 minutes more.

5. Garnish with more herbs and squeeze lemon juice on top. Serve immediately.

Prepared at least once a month in my house with skinless salmon, a side of mash potatoes and a green vegetable. I add 8oz of spinach to the dish and I always add two pinches of the Gourmet Garden lightly dried basil.

I made this yesterday but with mushrooms instead of spinach, I didn’t have any spinach.. it was the best meal I’ve had in a long time!!

wow i just made this and it was soooo good!! i added basil (no parsley) and i paired it with garlic herb mashed potatoes. it was quick and easy! absolutely delicious thank you so much for the recipe.

Made this today very easy and very tasty got very good compliments. I added small boiled potatoes a bit of white wine some olives and sun-dried tomatoes also I used dry Italian herbs. Definitely going to make it again...might add a few capers next time.

I've made a very similar dish, but with shrimp 🍤. Instead of bazil i used Italian seasoning, and instead of cherry tomatoes I used sun dried tomatoes and I served it over orzo pasta. I was delicious and even better the next day. The sun dried tomatoes added such an amazing flavor and texture to the dish.

I made this today and I am blown away. This taste like something straight from the Cheesecake Factory! I added a little red & green bell peppers, onions, mushrooms it was amazing! I had it over white rice. Will be making this again with shrimp.

If anyone watching this is cooking for someone with lactose intolerance: You can substitute coconut milk or coconut cream for the dairy cream, and it's just delicious. My husband couldn't tell at all that I'd used coconut cream.
