This Nacho Casserole is clean keto / low carb. Pork Rinds are used instead of regular chips. The taste is delightful and the 'chips' aren't missed! I also made a dairy free option which was amazing! Great for football parties

I appreciate you doing both versions as we eat a boatload of dairy. I needed another ground beef recipe as we don’t have a lot that we enjoy. I intend to make your cheesecake recipe soon as well! I crack-up whenever you mention that you are 100% Sicilian 😂. My father was 100% Sicilian but I never gave it much thought until I discovered Sebastian Maniscalco (sp?) a few years ago. In his early routines he did a lot about his father insisting that Sebastian say he was Sicilian and NOT Italian like the mom. It is hilarious!!
