Happy early Birthday Catherine!!! The cake looks amazing and I can hardly wait to try it. I have an observation though about separating eggs. Use your hands rather than flipping between the shell halves. There is almost zero risk of breaking the yoke and you get all of the whites, plus no shell pieces in your eggs. Yes, it is a bit messier but it works like a charm. :)
