Many times Anakin was reckless (as he also called Ahsoka when they first met). I think (rather than this hypothesis) that Yoda assigned Ahsoka as Anakin's padawan because he expected whether Anakin is responsible for someone (more directly than the clones under his command), he might learn to be more mindful and patient.
Anakin told Yoda about his nightmares in the Revenge of the sith when the siege of Mandalore actually happened (so he got the warning about letting go too late).

It wasn't just that she left, it was how she left and the fact that she was essentially forced out because she could no longer trust the Jedi order. The council made so many mistakes during that time period and so many of them were at the expense of Anakin. It's not really surprising he took the path he did.

Yoda had good intentions, they were mostly done the wrong way. Anakin needed a father, someone to look up to and trust, a teacher and a parent. But Obi Wan was more of a brother to him, Ahsoka was anakin being protective of a little sister, he had every attatchment other than a role model, and that's why he fell so easily to palpatine.

I think it's the circumstances that Ahsoka left in. If she stayed and was knighted and moved on in the order, Anakin would've been fine.

I think it was actually a good decision to give him a padawan. I mean he did a good job teaching Ahsoka and even the process of mentoring her certainly didn't hurt his 'maturing progress'.

I think the idea could've worked, if it hadn't been for the circumstances - (being kicked and almost deemed for execution, only because most Jedi and even most of the senate just kinda refused to try and properly understand them and Ahsoka's situation) - and that she actually left, instead of becoming a full knight one day. That rightfully increased his distrust in the order.
So I kinda think it was the situation and not the mere point that he had to 'stop' teaching her for that moment.

I think if she stayed and went on to become a full Jedi, it would have had positive effect on Anakin too, as he would have really seen her grow into her role within the order, gain even more confidence and so on (I just can't find the words right now).
But that might be only me.

And btw. sorry for the the messy sentences, I just wrote down my thoughts.
