3 teaspoons (4g) espresso powder or instant
coffee or more for stronger coffee

8 ounces (225g) softened mascarporne or cream cheese
⅓ cup (65g) powdered erythritol
1 teaspoon (5mL) vanilla extract
½ teaspoon (3mL) rum extract (optional)
¾ cup (180mL) chilled heavy whipping cream

4 large egg yolks at room temperature
1 teaspoon (5mL) vanilla extract
3 tablespoons (45mL) unsweetened almond milk or water
3 tablespoons (45mL) avocado oil or any oil of choice
¾ cup (75g) blanched almond flour
½ teaspoon (2g) baking powder
pinch of salt

4 large egg whites
¼ teaspoon (1g) cream of tartar or ½ teaspoon (3mL) lemon juice
¼ cup (50g) granulated erythritol

unsweetened cocoa powder

Bake at 335°F (168°C) for 18-22 minutes.

I tried this recipe and can say its very good :) I tried with marcarpone and cream cheese. Mascarpone was definitely better. Instread of erythritol I used liquid stevia which worked out fine.

I did it few times. Best Keto desert ever even for non Keto family members. Congratulations for this recipe and thank you so much for sharing it! Just a little thing in the list of ingredients the tablespoon of coffee is not mentionned in the first mix but it is in the video. Personnally I put 2 Tablespoons of espresso as I like so much the coffee taste. Again thank you!!!

Honestly you are by far the best source for Keto recipes. I've done numerous of your recipes, and they always turn out fantastic. I really love the techniques. For instance, whipping the egg whites for cake batters. So simple, but it makes ALL the difference when making Keto cakes. Somehow your recipes make me forget I'm eating low carb. Thank you so, SO much. My husband and I loved this recipe. Next time we will try the mascarpone variation!
