Spicy Chickpea and Avocado Wraps
Ingredients:
- Chickpeas (canned or cooked) – 200 g
- Avocado – 1
- Spinach leaves – 100 g
- Whole wheat tortillas – 4
- Lemon juice – 1 tbsp
- Cumin – 1 tsp
- Chili powder – 1 tsp
- Olive oil – 1 tbsp
- Salt, pepper – to taste
Preparation:
1. In a pan, heat olive oil and sauté the chickpeas with cumin, chili powder, salt, and pepper until crispy.
2. Mash the avocado with lemon juice, salt, and pepper.
3. Warm the tortillas and spread each with mashed avocado.
4. Top with crispy chickpeas and fresh spinach leaves.
5. Roll up the wraps and serve immediately.
