Street-Food Style Chickpea Tacos

1 can chickpeas, drained and rinsed
1/4 tsp cumin
1/4 tsp black pepper
1/4 tsp kosher salt, I use Morton’s
2 tbsp extra virgin olive oil
1/3 cup salsa verde

for the crema:
3 avocados
1 tbsp lime juice
1-2 tbsp water
salt to taste

for serving:
corn tortillas
chopped white onions
chopped cilantro
more salsa verde

To make the chickpeas, rinse and drain the chickpeas and then mash with a fork. Next, warm a large frying pan over medium heat. Add the oil, cumin and black pepper and cook for 30 seconds. Then add the smashed chickpeas and salsa. Simmer for 5 minutes or until most of the liquid is absorbed.

For the crema, combine the avocados, lime juice, water and salt in a food processor and blend until smooth.

Serve the seasoned chickpeas in a warm corn tortilla and top with white onions, cilantro, salsa verde and avocado crema.
