Tomato skins are quite nice dried with herbs as seasoning, if you do something like this and don't want to throw them away :)

Just a couple recommendations to help your tomato product go further. Dehydrate the skins & seeds & then blend/grind them into a powder. I use the powder to thicken my sauces in place of tomato paste. I’ll either just sprinkle it in or I’ll add a 2:1 ratio of powder to water to make a paste that is absolutely delicious! Or just add a sprinkle of powder to add tomato flavor to any dish. I’ll even sprinkle a little bit on salad when I don’t have any tomatoes on hand.
And then regarding the juice you ladled into the bowl, instead of tossing that, can it up & then use it to make rice, add to soups, or just drink. It is so delicious and you don’t have waste that wonderful juice. And now you two extra products from parts you would normally throw away. How wonderful is that?? 😃

Hearing the watery juice you are ladling off is delicious, can them too! Good to cook rice and in soups. Some also save the skins and seeds to free dry and grind them into a spice or for thickener for the sauce.

Please, dont put acid on the tomatoes 😱. I see that over and over again in american recepies for canned tomatoes. That will make your souse sour. In the countries with big canning coulter, no one will put acid. Tomatoes alredy have natural acidity. Even Italians, who have one of the sweetest tomatoes won't do that. Maybe a little bit of salt and thats it. In my country we are canning tomatoes for 100 years and we don't put anything. Please, try it next time with 2-3 jars. You'll see they will be well preserved without acid.

That looks exactly like my grandmother's ground cellar used to look like. She used to write on the top of the jars like you. Beside the new tech bits around, it's amazing how similar the old process and the new process is. It's nice to see it.

As someone who lived of the ground I assure you - tomatoes do not need any acid. Tomatoes have their own acid already. Just boil and can. That's it. I love tomato juice (we call it juce) as a drink with potato meals (just add a little bit of salt) and we add it to soups. Delicious ❤

Just a random thing I learned a while back: you can store you glass jars with water in them or at least some of them. that way if something happens and you are without water you will have some in your jars 😁 plus then you don't feel like your empty jars are wasting space 😅

I am so jealous of people with the knowledge and know how an energy to can their own food after growing it I think it's awesome and I think more people ought to do it and I wish your neighbor who did it and I wish I had a neighborhood did it and had lots of extras!
