I mash them up in my food processor, add lots and lots of butter (I did 70 scapes), some Italian seasoning and sea salt... keep processing until smooth. I then put it in silicone cube trays and freeze it, pop them out and store in a zip-loc in the freezer. I use this for garlic bread or in any other wonderful garlic food prep. You could do this with EVO as well. This works great with EVO for pesto cubes also!

Excellent idea for pizza. I've never used them before. But I do the garlic and oil for pizza. I'm getting ready to trim them. In southern Michigan.

I left my scapes on the plant too long last year. I made a really good soup by chopping them up with onions and tomatoes.

Just a thought, the scapes arent that important, why wait till they curl, just cut em off before they slow down the bulb growth, letting them curl then cutting off in my mind would shock the plant, get rid of them quik, i dont see people talking about this technique, its always let them curl, forget the curl
