Obviously it depends on what you're cooking if it's steak I'm grilling, brisket, ribs, pork butt, turkey I'm smoking it. I smoke and grill with charcoal.

Fun fact:
If you get caught smoking with a electric or gas smoker in Texas you'll get arrested with a felony charge.

I put 2 giant slabs of pork ribs on the grill the other day.
I always use charcoal.
But, this time I put on some hickory wood chips and sprayed the ribs with apple juice occasionally.
We have leftovers, too. They're delicious.

They both of their place for sure. Judging by some comments here, some of had some very poorly prepared smoked food. It should never be cold or dry :)

Really it all depends on what im trying to cook, I’m team charcoal BUT I use a more combined method of indirect heat and Direct heat with or without wood depends on what I’m cooking

Tragers are not smokers. They are pellet grills. The only true smokers are stick burning offsets.

Low and slow beats a fast burn. To do best, go low and slow, then create the Maillard effect on top. I cook sous vide with liquid smoke and a dry spiced brine, then finish with a weed torch, making it perfect every time, 100% repeatable, no guesswork, no risk. I don't waste a lot of time standing over the food, either.

Try sous vide, you won't go back.

As for charring, you don't have to get crazy about it.

Smoked meat taste better and the good flavor lasts much longer. Grilled meat is good fresh off the grill but it loses its flavor when you eat it as leftovers

Depends on the food, depends on the time of year. I've banging recipes for smoked sausage in the summer, AND high heat grilled brat's in the winter. You need to be versatile.

Anyone can do a prime rib in a oven. But to smoke a prime rib in a smoker takes the cake! Smoked meats rock!

I do it all, Souse Vide, Pellet, wood charcoal and just plain charcoal, you can say I have grill and Sous Vide problem. but will never, ever, ever use a Propane Grill ugh!
