Thanks for the cool video and all information!
The unmounting issues you had maybe could be circumvented by not ticking 'Live CD/DVD' under the storage tab while setting up the VM(?)
I haven't tried it myself so I don't know if it would work, but it's just an idea.

20.04.1 has been a real issue for me. I have an HPE DL60 G9 with 16Gb of RAM and two integrated 1Gb network ports. I start the install set two fixed IP addresses at 192.168.3.24 and 192.168.3.25 on their respective ports (enl0 and enl1). I then bond them under bond0. I set my name and proceed to set the server name and user name. Then, the installer crashes. the only way I can get by that is to use all defaults for the network setup using DHCP and no fixed IP. I can then go to Netplan and set up (Netplan is a seriously arcane utility failing due to indentation issues is frustrating) the two fixed IP addresses but Netplan crashes when I try to set up the bond on the two addresses in the .yaml file and it's not clear what it wants me to do to fix it. I also can not get the server to show up on my windows network anywhere nor can I get access to it by adding the computer in file explorer for SAMBA. really frustrating. I managed to get the second hard drive mounted. Why doesn't the installer see the drive ask me if I want it mounted and where? So far its cost me two weeks of time and effort and I still don't have a server that I can access from my network. I'm going to step back to 18.04 and see if I fare any better. The fact that it's crashing during the install is a very serious concern about its stability. Other reviews have indicated extensive bugs and some of the real show stoppers that suggest 20.04 are not ready for production.
