Realistically, K.I.T.T. would have won.
He has impenetrable armor(tires included), is powered by a turbine engine with turboboost(afterburner?), is quoted to be 100% fuel efficient, has the laser, flamethrower, and is ARTIFICIALLY INTELLIGENT.
Even considering the programming that prevents him from harming human beings, he wouldn't have had any problems disabling the other cars.
That is assuming he didn't clinch the victory through speed alone.
(Seriously, he can hit 300mph and can accelerate 0-60 in 2 SECONDS)
