an easier way to cut the watch glass off without needing an extra hand: glue it to a larger piece of glass (like a broken screen protector), so the vacuum has more to hold onto

Please, do not use LOCA for glass replacement. Use Glass with pre applied OCA insted.
And use LOCA for capturing shards. Glue the display with LOCA to some big glass (like protective or replacement) and it won't slide away from separator.

LOCA can damage display flex and in the next time it may be harder to replace the glass.
Also you do not have to cut touch scren if it is still working
