Beef Short ribs on the BBQ are one of my favourite things from the grill. I love them slowly smoked until almost falling apart and very juicy. The best thing to as your butcher for is a jacobs ladder if you want the best smoked short ribs.

My favourite way to cook bbq short ribs is with a thick crust of countrywoodsmoke mocha rub, and then smoke with a combination of cherry and hickory, smoked in the Primo ceramic grill at 140c.

I finished off the beef short ribs with some Sauce Shop cherry bourbon sauce once they were probing really tender, about 95c. Cooking for another 20 minutes, I allowed to rest for around half an hour before getting stuck in. Ideally a little longer, but I just couldn't resist, beef ribs on the grill are one of the tastiest things.
