How to Make Cheese Jam or Jelly with Ceylon Hill Gooseberry

Here's the cheese jam/jelly I promised to make out of the Ceylon Hill Gooseberries I harvested last week including the recipe and a taste test.

The quantities & produce used for this jelly were:
Started with Ceylon Hill Gooseberries - 1.4kg (about 3 pounds)
Reduced down to - 456 grams (1 pound) of strained syrup
Sugar added - 456 grams (1 pound)
Juice of half a large lemon

I've never heard of eating jam and cheese together. The jam looks great. Have you ever made your own cheese?

I think of gooseberries as being, tart, I notice you use a lot of sugar, so I would guess that jam is not tart at all?

never heard of a cheese jam in my life, must be an Ozzy thing.
I suppose it's no different from calling stuff a jelly if it goes on meat or cheese. Same stuff, different continent.

Like all berries they all have so much seeds. The jam look great but just too sweet.
