I think it's more expensive to hire workers to make full fake eggs and probably no businesses want to do that. However using machines to make fake salted egg yolks is definitely profitable as they are used in mooncakes, bakery, restaurants, etc. and can be frozen for exports. There is no way workers can make enough eggs to supply to the demands daily let alone exporting them. Our country with 34 million population consumes 28 million eggs a day.

More likely that these "fake" eggs are not sold to deceive the public but sold as a novelty food that imitates egg form and properly identified. Some of these eggs are made from edible ingredients, such as gelatin or agar-agar. Not something that can fool anyone.

My nephew has glutaric aciduria. He can't take proteins in his diet and he is only 2 years old. I don't want him to miss out on little things like everyone having an egg on breakfast table and he would have to have a separate breakfast. Only if these fake eggs become safe for human consumption, then at least he will not feel lonely on breakfast tables, and his meal will look like everyone else's.
