This is a fall recipe you must make this season...especially if you aren't a pumpkin gal. The best part is everything is made inside the spaghetti squash, and served in the squash....so less dishes, yay!!

Yogurt: Two Good Yogurt

⬇️ WHAT I'M WEARING ⬇️

INGREDIENTS

One large Spaghetti Squash
1 cup nonfat Greek yogurt⁣ (approx. 8 ounces)
2 TBSP Red Hot Sauce
½ TBSP fresh parsley, chopped
1 tsp dried dill herbs
½ tsp fresh chives, chopped
½ TBSP garlic powder
½ TBSP onion powder
1 TBSP lemon juice⁣
2 cups chicken, cooked and shredded
4 TBSP blue cheese⁣ divided
Garnish- Chopped fresh chive or Chopped fresh green onions

Instructions:
Preheat the oven to 400° F. Cut the spaghetti squash in half, scoop out the seeds, place it on a baking sheet skin side up, and bake for 40-50 minutes until softened.
During the last 10 minutes of the squash roasting, make the filling.
In a large mixing bowl, add Greek yogurt, hot sauce, parsley, dill, chive garlic, onion powder, and lemon juice. Mix until combined.
Add the shredded chicken and mix until the chicken is fully coated.
⁣Once the spaghetti squash is done baking, carefully flip it over to show the inside, and using two small forks, lightly shred the inside of the squash to form the “spaghetti.”
Fill each ½ baked squash with the chicken mixture and top with 2 tbsp of crumbled blue cheese on each side.
Place back in the oven for another 5 to 10 minutes until heated on top and warmed through.
Garnish with fresh chopped green onions or chopped fresh chives.

Have to tell ya I’m thrilled over these simple but delicious recipes … I got so bored with keto for awhile just eating the same things over and over but with your recipes it’s a whole new experience and one that is successful!! I’ve lost 7 lbs in two weeks😋

A trick for spaghetti squash if you want longer noodles is to cut it in half the other direction instead of the long way. But it doesn't make as nice of a bowl.

I love all squash but I don't like spaghetti squash, what am I doing wrong?

It has a back taste of metal and I've tried cooking and preparing it in different ways. I don't get that with summer or winter squash or pumpkins. I can't figure it out.

Boy, you got it right. Cut open the spaghetti squash and throw it in the trash. LOL! I tried it once, and I just cannot like it. But, the chicken without the squash sounds good!

Cook your spaghetti. Squash in a microwave for 4 minutes. Easier to cut
