Have a look at self adhesive closed cell foam for the headlining.

How about some new engine bay heat resistant insulation and then try some waterproofing spray on the underside of it? I’ve never used it but I think it has silicone in it that gets into the material to stop water getting into the gaps. Not sure how it would work with the engine heat though.
