all the party rib recipes I have seen say 2hrs at 275. How can these ribs be possibly done at 250 for just an hour and a half?

Cooking videos with these black gloves doesn't have any personality. No love in that food prep. It's raw. He's not wearing it for the temp. He's handling all his bottles, he's not wearing it for the contamination or the mess. I'll check the technique, but it's just a peeve with this trend.
