We are so much alike. I made Vanilla about 5 years ago. I bought the big jugs of: clear rum, dark rum, spiced rum, vodka, whiskey and gin. They've been sitting away in a closet since I'm still using vanilla I already have open. I used the Madagascar Bourbon vanilla beans. I'll have to sneak in there and take a look at them, haven't seen them since putting them away after 2 months of shaking the bottles. 🌹

FYI: because of the alcohol you can keep your bottle going indefinitely just adding beans and vodka occassionally rather than starting over. the vodka (or other high proof alcohol) preserves the beans. It's important to keep the beans covered in the alcohol doing it that way though.

I have a bottle of vanilla I made like that about 10 years ago, of course its lost its potency, would you dump that and start over, or remove the beans and add new ones? I forgot how much I used to love this

I use Kamchatka vodka, absolute vodka, Jim Beam Kentucky Bourbon, fireball whisky and Bacardi Rum.
These all make great flavored vanilla 😋 i really like the fireball but cant open the bottle very well 😊😂my son has to do it for me. I think the sugar content makes it stick😅😮😊

Instead of slitting and cutting the beans, could Imput the hooch and vanilla beans in a container and use an immersion blender, wait a few months and strain? I seems like that should work.

When youre adding additional vodka to a ready vanilla made bottle, does that need time to settle as well? Or you can you continue using the old bottle with new vodka?

Technically speaking, you can't call that vanilla extract - you are making vanilla flavoring - especially once you dilute it with more alcohol (tsk, tsk, tsk, do you do that with your coffee grounds, just keep using them over and over and just adding more and more water?).

If you want real, pure vanilla extract, you should be weighing your beans: 1 ounce (minimum) of vanilla beans (VBK has good prices) to each and every 8 ounce (1 cup) of alcohol (that is between 35% ABV - 50% ABV = 70ºP - 100ºP). It's okay to make the ratio of beans to alcohol higher but not lower. If you dilute the vanilla extract, you are down to weaker vanilla flavoring (no matter how long you let it sit, beans are "spent" after about 6 months but aging will add complexity and depth of flavor).

Your kitchen, your rules!

BUT! if you try to sell it - your bad (not saying you are bad, rather properly using slang as in: my bad, Well, unless properly labeled as vanilla flavoring rather than using the FDA regulated term: vanilla extract).
Just make more extract OR try making vanilla paste (which can be used immediately in baked goods or aged a few days or so for non baked purposes). ;-)
