Cowboy Kent, I used to love sharing your recipe videos with my father. He was a proud Oklahoman and loved the outdoors and cooking. He passed away this weekend completely unexpectedly. Naturally it's hard, but while I go through the process with my sister of getting things in order, watching your video has helped me to think of the good times, barbecuing, helping out in the backyard, camping trips and more. Thank you for what you do, creating wonderful content for our family and sharing these great videos. Im sure you know this but to many people it means so much more than just a delicious meal

Kent I’ve been watching you for 4 plus years and I enjoy each and every video you and Shan have been gracious enough to put out. I just want to tell you that I eat my pork chops at no higher than 145 F . That’s the new recommendation. Haven’t had any problems.

I am so happy to have found this channel last night ! I showed a couple of these to my 89 year old Dad . . . Yewwweeee! He was laughin and smiling ! Can't wait to try some of these delicious recipes ! I'd also like to compliment on how well these videos are produced, Kent is awesome, and the dogs are such a nice touch . . . the way the videos are edited and filmed has the perfect blend of great videography, professionalism, light-heartedness, and a welcoming feel. Can't compliment you all enough, and I thank you so very much for taking the time to produce these, I can't imagine the hours 'off-camera' that go into it, but you make it look so easy, a true sign of greatness! Hey Kent, I just picked up a couple of those fat chops last week. They're called Husker Chops in my neck of the woods. I was gonna stuff em and do em on the grill but now I think I'll do a combination dry brine and stuffed. Not too many grilling days left this year, winter is on the way. Mr. Kent, your videos are the highlight of my week. Two years ago, I couldnt cook a scrambled egg without burning it. Now thanks to you, I smoke ribs, grill steak, chicken, cook wild game, make jerky etc. Thanks so much for your knowledge. My wife thanks you as well.

Dry brineing seems to be the holy grail of cooking. Alton Brown explained it very well, the salt brings the water and tasty proteins to the surface of the meat, and then the meat pulls the salt back in, seasoning the meat from the inside.
